Potatoes Dimon Bruce

or as we call it in Iceland
Dímon Kartölfur Bruce
These are quick and easy potatoes.
I've cooked and served them in Hvallátur,
Stykkishólmur, Akureyri, Sauðárkrókur, and Vestmannaeyjar, Iceland with requests for the recipe every time.

Ingredients:
1 bag of new (small) Icelandic potatoes.
Dash of salt
1/4 - 1/2 cup of skim milk
The secret ingredient
1 package of Stóri Dímon cheese.
(It's a soft cheese
similar in taste to a light blue cheese.)


Cooking Directions
Wash and halve large pototoes
leaving on the skins.
Boil potatoes in salted water for 20-30 minutes until tender.
Mash them and mix in a 1/4-1/2 cup of milk.
Cut cheese into pieces and fold into the
hot potatoes letting the warm potatoes
melt the cheese as it's mixed together.
Serve.

About Stóri Dímon


Stóri Dímon...
is a small mount located on a flat plain of glacial till on the south coast of Iceland. It is the logo and home of the cheese.

My good friends, Óli and Bína, have a summer house with a view of Stóri Dímon. I have enjoyed visiting there and so I have a certain fondness for this area. These two photos were taken from their summer house.

Because it's so dramatically prominent, it's no surprise that it has been photographed and painted many times. In 1902 Þórarin B. Þorláksson painted a view of it. Today that painting is part of a collection of his work at the National Gallery in Reykjavík.
